  1. to pick a goose is a rather bloody mess, so it would help to do this on a peice of old ply wood, or the tailgate of your tuck. and have papertowles and a garbage bag handy.
  2. first, kill some geese. these steps work best if the goose is already dead.
  3. next step would be to get rid of the wings. you can ether get a set of strong branch cutters and chomp there wings off, or you can use a knife. to use a knife to take the wings off, first cut from the top of the wing downward to the bone. flip the knife over so its blunt side is faceing the cut you made. then smash the bone with the blunt side of the knife till the bones are broken completely. then flip the knife so the sharp side is tward the cut. and then cut through the rest of the wing.
  4. when the wings are gone, pick the feathers of of the goose. this is the longest part of the process. when you pick the feathers off, dont grab a handfull of feathers then yank them out, because you might rip the skin on the goose. to pick the feathers off, grip them like you would a peice of paper that you are aobut to rip. then pull the feathers tward the bottom of the goose. pick the feathers all the way around the goose, up to the neck, and down past the legs.
  5. next comes the bloody part. this is where the branch cutters come in handy again. first cut the neck off at the top of the breast then cut the feet off. then cut the bottom off. start just below the legs and cut all the way across to underneath the other leg. right through the bones and guts. if you dont have or dont want to use some branch cutters, use the knife the same way you used it on the wings cut to the bone flip the knife smash the bone in peices, then cut through the rest of the way. on the feet you can skip cutting first, just snap the leg then cut through.
  6. after you have that, comes the part you get really bloody. reach in the hole at the bottom of the goose pull out all of the inards. heart, gissard, wind pipe, liver and the reast of the lot until the goose is hollow.
  7. after that wash the goose. run some cold water throughthe middle and wash the rest of the blood off. and while your there get some of the feathers that you missed. put it in a bowl of water and put it in your fridge. or store them in some gallon sized glad bags and put them in your freezer. then when you are ready bake them or you can get them smoked.
  8. if you have a couple of geese to be picked, do the steps at the same time. first do all the wings then pick them , then cut them into peices then clean them out. and get your kids and wife involved too! make it a family activity.

  • if you have a serrated knife that will work really well.
  • this process could become borring, so turn the radio on.

  • be shure you knife is heavy and sturdy, because you dont want to break you knife on the bone.
