How to Make Shortbread

A simple recipe that makes a tasty shortbread. It can be made plainly or with some chocolate drops. Numbers vary.

  • 1lb butter
  • 1lb sifted flour
  • 8oz rice flour
  • 8oz powdered sugar
  • Pinch of salt

  1. Grease your baking tray, and preheat the oven to 200 degrees.
  2. Put all the ingredients in a mixing bowl. With a knife, cut the butter into smaller chunks, whilst mixing.
  3. When the butter is of manageable size, get your hands in and rub it through your hands.
  4. Soon it should begin to bind. When it does, gently pressure it against the side of your bowl and move it round, picking up all the other dry ingredients.
  5. The dough should be dry and manageable. Flour a surface down and knead the dough into a roughly oval shape, and smooth down the edges.
  6. Using a floured rolling pin, roll out the dough into a thickness which should be thicker than a cookie but thinner than a scone.
  7. Cut the dough with cookie cutters, or the top of a drinking glass, and place them on a baking tray.
  8. Place in the oven.
  9. Cook for about fifteen minutes, constantly checking to make sure they are not burning. Remove when they look a golden brown color.
  10. Check underneath the shortbread to make sure they are done. Then, leave to cool.
    • If you are giving the shortbread away as a gift, a good idea is to tie it with ribbon. Stack two on top of each other and tie it. You can use ribbon with designs on it or a solid color.
  11. When cool, pack in an airtight tub or wrap in cling-film to stop the shortbread going stale.

  • Sprinkle a little sugar on when cool. It makes them a little sweeter.
  • This recipe can be halved or quartered for a smaller amount
