How to Make Scandinavian Fruit Soup



A dried fruit soup to serve warm or chilled depending on the season and your preference. This provides 12 servings and requires 8 hours cooking time in a slow cooker.

  • 1 cup of dried apricots
  • 1 cup of dried sliced apples
  • 1 cup of dried pitted prunes
  • 1 cup of dried cranberries
  • 1 cup of canned pitted red cherries
  • 1/2 cup of quick cooking tapioca
  • 1 cup of grape juice
  • 3 cups of water
  • 1/2 cup of orange juice
  • 1/4 cup of lemon juice
  • 1 Tbsp of orange peel, grated
  • 1/2 cup of brown sugar

  1. Combine all dried fruits, tapioca, grape juice, and water in slow cooker.
  2. Cover and cook on low for 8 hours.
  3. Before serving, stir in orange and lemon juices, orange peel, and brown sugar.
  4. Serve warm as soup or dessert.
  5. Serve chilled with frozen vanilla yogurt.
