How to Make Red Beans and Rice
Red beans and rice make an economical main dish which could be a vegetarian friendly meal.

- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 clove garlic
- 2 tablespoons butter or margarine
- 16 ounces kidney beans
- 2 cups cooked rice
- 1 tablespoon chopped parsley
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

- Cook onion, celery, and garlic in butter or margarine until tender.
- Remove garlic.
- Add remaining ingredients.
- Simmer for 5 minutes to blend flavors.
