Red beans and rice make an economical main dish which could be a vegetarian friendly meal.

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 clove garlic
  • 2 tablespoons butter or margarine
  • 16 ounces kidney beans
  • 2 cups cooked rice
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

  1. Cook onion, celery, and garlic in butter or margarine until tender.
  2. Remove garlic.
  3. Add remaining ingredients.
  4. Simmer for 5 minutes to blend flavors.
