How to Make Ras El Hanout Spice Blend



This is a Moroccan spice blend that translates as "the best quality". Use in dishes inspired by Moroccan flavours.

  • 2 tsp coriander seeds
  • 1 1/2 tsp cumin seeds
  • 1/2 tsp cardamom seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp black peppercorns
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1/2 tsp hot paprika
  • 1/4 tsp salt

  1. Dry fry the seeds and peppercorns in a heavy-based frying pan for one minute.
  2. Pour the seeds and peppercorns into a mortar and pestle or processor for grinding.
  3. Add the remaining spices and salt.
  4. Grind or process the seeds, salt and spices until smooth.

  • Store this mixture in an airtight container.
  • This mixture will keep for one month.
