How to Make Puliogare

Puliyogare is a traditional South Indian rice dish. Here's how to make it.

  • 1 cup thick tamarind juice
  • salt to taste
  • 1 TBSP sugar or 1 small piece of jaggery
  • Seasoning:
    • 7 TBSP oil
    • 1 tsp mustard seeds
    • 1 tsp Urad dal (black gram dal)
    • 2 TBSP peanuts
    • 1 tsp chana dal
    • 3-4 red chillis
    • a few curry leaves
  • Grinding
    • 1 cup dessicated coconut or shredded copra
    • 2 tsp coriander seeds
    • 1 tsp peppercorns
    • a pinch of asafoetida
    • 6-8 red chillis
    • 1 tsp cumin
    • curry leaves
    • 2 tsp sesame seeds
    • 2 tsp chana dal
    • 1 tsp peanuts
    • 1 tsp urad dal

  1. Roast all the above ingredients one by one and grind until smooth except coconut. Then add dessicated coconut and grind once again to mix well.
  2. Soak tamarind in warm water for an hour and extract juice from it. Keep aside.
  3. Cook Heat oil in a pan. Add all the seasonings one by one. When mustard seeds splutters, add tamarind juice. Mix well. Now add jaggery/sugar and salt. Allow to boil.
  4. Add ground powder to the boiling juice. Turn heat to medium and boil for few more minutes till the juice becomes thick and oil separates.
  5. Preparing it on the microwave with a mix:
  6. Heat one bowl of rice mixed in with about one to two tea spoons of oil for about one or two minutes. Spoon in puliogare powder until the rice seems a medium brown, and stir. You can garnish it with fresh mint leaves or fried onions.
