How to Make Potato Latkes
If you are celebrating Chanukah, you must have latkes! These potato pancakes are fried in oil and symbolize the oil which burned for eight days leading to the phrase Chanukah, which means "a great miracle happened there".

- Peel the potatoes and grate them coarsely. If you're using onions, chop and add them to the potatoes.
- Beat two eggs and whip in a little flour.
- Squeeze the potatoes to get out some of the water in them. If they're too wet, they will not fry up crisp.
- Add the coarsely grated potatoes to the egg-flour mixture, blending well.
- Put some vegetable oil in your heavy frying pan and get it nice and hot.
- Use your mixing spoon, and gather a nice dollop of potato mixture. Drop onto the hot pan.
- Fry until brown, turn over and fry the other side. Serve nice and hot.
- Remove from oil when second side is golden brown.
- Place latkes on plate lined with paper towels to remove excess oil.

- You will probably be able to fry several at one time, depending of course, on the size of your pan.
- Serve with applesauce or sour cream.
- This will make about two dozen latkes.
