How to Make Polar Express Cookies
Polar Express cookies have a wonderful taste.. they are crunchy, chewy, and very delicous. Polar Express cookies really bring out the holiday spirit. So let's put on our apron and start making polar express cookies!

- 1/2 cup soft butter/margarine
- 1 2/3 cups of sugar
- 1 table spoon of vanilla
- 2 squares (2 oz) of unsweetened melted chocolate
- 2 cups of flour
- 2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/3 cup of milk
- 1 cup of raisins
- powdered sugar

- Combine butter, sugar, and vanilla with a hand mixer. Beat until light and fluffy. Gradually, add and blend in chocolate.
- Combine flour, baking powder, and salt; add to chocolate mixture, alternately with milk.
- Stir in raisins with a large spoon, not a hand mixer.
- Cover the mixture in tin foil and refrigerate until it is firm.
- Heat oven to 350ºF.
- Grease cookie sheet with butter or shortening.
- Shape dough (mixtures) into about one inch balls; roll into powdered sugar. Place on cookie sheet.
- Bake in upper third over for twelve to fifteen minutes. This recipe makes about 3 1/2 dozen cookies.

- Check the cookies every five minutes when they are baking in the oven to see if they are done and or if they need a couple more minutes.
