How to Make Pickled Watermelon Rind
Don't throw those rinds away. Pickle those suckers.

- 4 quarts cubed watermelon rind
- 6 cups sugar
- 3 1/2 cups cider vinegar
- 1/2 cup water
- 4 sticks whole cinnamon
- 3 tablespoons salt
- 1 tablespoon whole cloves

- Pare outer green peel from the firm white inner rind, discarding any pink flesh.
- Cut into one inch squares.
- Cover with water. Add salt and allow to sit overnight.
- Drain and rinse with cold water.
- Drain once again, and this time cover with fresh water and bring to a boil.
- Simmer until fork tender(approximately 5 minutes)
- Drain and set aside
- Combine vinegar with 1/2 cup water
- Add sugar
- Tie spices in a spice bag and add.
- Bring to boil for 5 minutes.
- Pour over rind cubes
- Let stand 24 hours
- Drain syrup
- Bring to boil.
- Pour over rind cubes
- Let stand 24 hours
- Bring syrup and rind to boil.
- Pour into hot sterilized jars and seal.
