How to Make Eclair Cake
Eclair cakes are easy, inexpensive, and you don't even need an oven.

- 1 box of graham crackers
- Whipped cream
- 1 box of instant French vanilla pudding
- Milk
- Can of chocolate icing
- Any size cooking dish

- Make the French vanilla pudding according to the instructions on the box.
- Mix the French vanilla pudding with the whipped cream.
- Place a layer of graham crackers on the bottom of the dish.
- Pour half of the pudding/whipped cream mixture over the graham crackers.
- Cover this with another layer of graham crackers.
- Pour the rest of the mixture over this second layer of graham crackers, then cover it with graham crackers again. As you will see, a layering affect of pudding mixture and graham crackers has been achieved.
- Microwave the icing.
- Pour the icing over the graham crackers.
- Refrigerate for 20 minutes or so.
- Enjoy!

- Try mixing up the flavors of the graham crackers (try chocolate or cinnamon) or the pudding (try chocolate) or the icing (try strawberry, cream cheese, fudge). Be creative!

- Don't microwave the icing with the protective foil still on. This is dangerous.
- Let the icing solidify before eating the cake or things get very messy.
