How to Make Adai

This is a south Indian pancake like dish, normally had on the days one fasts.

  • 1 cup of parboiled rice
  • 1 cup of raw rice
  • 3/4 cup of tovar dhal (remove about 1 tablespoon from that, fill the rest of the cup with urad dhal, but use the split ones not the whole urad)
  • 1/2 cup of channadhal
  • 7 to 8 red dried chillies (adjust this according to your taste)
  • 1 1/2 teaspoons of salt
  • 1/4 teaspoon of asafodetia
  • 1/2 cup of grated coconut or 1/2 cups of finely chopped onions or 1/2 cup of drumstick leaves
  • curry leaves (for taste)
  • oil (to make pancakes)

  1. Soak the dhals and rice for about 3 hours.
  2. Grind them coarsely in a grinder along with the asafodetia, dry red chillies, and salt. While grinding, do not add water or add a little water if really necessary.
  3. Add the grated coconut and curry leaves.
  4. Make pancakes with the dough.


[edit] Tips

  • Adai is normally eaten with a blob of Jaggery and Curd ( do not mix them, serve them separately)
  • In restaurants, this is served with Avial.
  • Vatha Kozambu is a good side dish also.
